Unnakaya is a sweet tea time snack made with ripe banana especially during Ramzan season. It is very good for children. It is a rich source of Potassium, fiber and proteins. For preparing it we need 3 or 4 ripe bananas (Nentra Pazham). First cut the bananas into 2 or 3 pieces and put it into boiling water and cook until the peel separate from the fruit. Then peel the bananas and cut it in the middle and remove the black seeds inside it, then smash it well and make lemon sized balls.
For filling, heat a thick bottom vessel and pour 2 table spoon of ghee in it, then add 50 gram broken cashews and 5o gram raisins and sauté. Then add 1 cup of grated coconut into it and sauté till it becomes brown.
Beat two eggs with 2 table spoon of sugar and a little salt, pour this mixture in to the pan and stir well until it become dry. Remove from fire and allow it to cool.
Take a banana ball and spread it in hand and put 1 table spoon of filling in it, then cover and shape it like small bananas. Then heat oil in another pan and put unnakaya into the oil and fry until it becomes brown.
We make banana fries for teatime, for that we first boil the banana and cut it into 4 or 5 slices, after that made a paste with wheat flour, sugar, salt, turmeric, egg and water. Dip the slices in the paste and fry it in coconut oil. Also we made banana fries without boiling it.
Unnakaya is not good for diabetic and cholesterol patients but it digests very fast.
