We usually eat dosa and idlly.but how are they made? very few may not know.Preparation of idli requires rice and uzunnu.we put them together in a mixi or grinder and mix them,with water. then we place the mixture in a place for one day. We do this in the evening.In the morning we take a large bowl(idli kuttakam) and place some small plates inside it. This small plates have holes in it to put the mixture.Then we put all these in the gas and wait. After some time when the steam comes, we take them outside.We use some chatni to eat Idli.
Making Dosa is also same. after making the mixture,next day we take a large plate made of iron. This is called Dosa stone.We put a large spoon( Thavi) of the mixture on the dosa stone. and use some coconut oil on the stone . We always use coconot oil in our homes.Then after some time we take this with the help of a large spoon(chattukam) and put the other side on the stone.After two sides are okay, we eat it again with chatni.
Also some people use Sambar with dosa and idli. In our hotels we get a vada with dosa or idli.Vada is very tasty.it is prepared with uzunnu. some vada (parippu vada) is made with dal also.

it seems to be universally consumed by all south indians
